What are the signs of a good quality matcha?

There are five key ways to determine the highest quality of matcha:

Origin: Japan.

Method: tea leaves grown under shade for three weeks before the first flush of spring, leaves are hand picked, veins are removed, then powdered using traditional granite stone mills.

Color: the 20 days of shade force the plant to overproduce chlorophyll, which is what makes the tea a vibrant emerald green. Low quality matcha is pale and yellowish.

Texture: matcha is milled using granite stone mills. The result is a silky texture, with an average particle size of 10 microns (0.01 mm).

Taste: the L-theanine produced by an excess of chlorophyll gives the matcha a sweet taste and aroma of fresh grass. Low quality matcha tends to be bitter and astringent.

Does matcha contain added colors?”

No. Pantenger Matcha is 100% green tea made from tea leaves that are stone milled into a naturally vibrant green powder.

How can I keep my matcha fresh?

Matcha is very delicate and absorbs moisture and aromas from the atmosphere. Pantenger Matcha is supplied in airtight tins for added protection which should be stored in a cool dry place, then refrigerated once opened. The matcha should be used as soon as possible, and may also be kept in the freezer to lengthen the storage time.

What is tea?

Tea is the liquor obtained by extracting the soluble components from the Camellia Sinensis leaf with hot water.

How many teas exist?

There are thousands of teas and hundreds of different names and it is impossible for a single person to know them all.

However, there are six tea categories: white, green, yellow, oolong, black and dark. All teas belong to one of these categories.

What is red tea?

Red tea in China is black tea in the USA and Europe.

The Chinese call it red tea because of the colour of the infused liquor.

The Dutch were the first to import tea to Europe and they call it black tea because of the colour of the tea leaves.

The categories are defined by its manufacturing process and level of oxidation

All teas are harvested (manually or mechanically) and then arrive at the tea factory. Any tea leaf could become a white, green, yellow, oolong, black or dark tea.

What is oxidation?

Oxidation is a chemical reaction generated at the tea factory when the tea leaves are gently bruised to break the cells that contain polyphenols.

Polyphenols, the enzyme polyphenol oxidase and oxygen react forming a brown-red compound that gives colour and flavour to the tea.

The are two main polyphenols that emerge during the oxidation process, theaflavins that emerge fast and contribute to the bright and brisk taste of black tea and thearubigins that only emerge during the long oxidation process and provide strength to the tea and a sweet and mellow taste.

What makes a tea blend special?

The challenge of the tea blender is to create a flavour that tastes natural to the drinker without losing the singularity of each ingredient. The blend has to be beautiful to the eye. This could be achieved using flowers, seeds and fruits and the best tea leaves. The aroma is usually composed of essences using similar techniques to those in perfumery and in many cases sharing the most refined ingredients to enchant the nose. A great tea blend is always created with a purpose. The aim is to achieve a taste that evokes a time, a place, a person or a mood.

Our blends are made using our own tea recipes. The most refined ingredients and best tea leaves are used. Our Earl Grey is a blend of the finest Ceylon OP from Dimbula and Bergamot Essential Oil from Calabria.  Our rose tea is made with Moroccan rose petals and our Raspberry and Mango teas use tea leaves from new high altitude tea fields in Rwanda.

What water should I use to infuse fine tea?

Tea is 99% water and the quality of the water matters.

Water containing excess chlorine or high amounts of minerals – Total Dissolved Solids (TDS) > 100 parts per million (PPM) will make your tea tasteless.

Most tap water from the West Coast contains high amounts of TDS.

Chlorine and excess minerals can be reduced significantly using a filter.

Bottled spring water is sometimes the only way of getting the right water for your tea.

Most bottled water labels will indicate the amount of total dissolved solids.

Does tea contain caffeine?

Yes, all teas contain caffeine regardless of their type (black, green, white, yellow, dark and oolong). Caffeine is a natural insecticide that plants like tea, coffee and cacao produce to repel insects from their leaves.

How can I reduce the amount of caffeine in my tea?

You could reduce the amount of caffeine in your tea by 60% by infusing your tea for one minute, then infusing the leaves again with fresh water to make the actual tea that you drink.

This will reduce the amount of caffeine in your tea but it won’t make it a decaffeinated tea.

What does OP mean?

OP is an acronym for Orange Pekoe.

OP means whole leaf. This is a tea grade used in India, Sri Lanka and the New World. It is not used in China or Japan. It does not imply anything related to the quality of the tea.

In a different context, Orange Pekoe is also the first leaf that appears after the bud.

What does FTGFOP1 means?

Finest Tippy Golden Flowery Orange Pekoe.

This gives information about the tea leaves.

It should be read from right to left.

1 (One) - all leaves have similar sizes.

OP (Orange Pekoe) - whole leaves.

F (Flowery) - contain buds

G (Golden) - the percentage of buds is large.

T (Tippy) - Large amount of white tips.

F (Finest) - An excellent batch of tea.

Why is my tea weak or tasteless?

Fine teas are extremely sensitive to water quality.

Tea is 99% water and the quality of the water matters.

Water containing excess chlorine or high amounts of minerals –Total Dissolved Solids (TDS) > 100 parts per million (PPM) will make your tea tasteless.

Most tap water from the West Coast contains high amounts of TDS.

Chlorine and excess minerals can be reduced significantly using a filter.

Bottled spring water sometimes is the only way of getting the right water for your tea.

Most bottled water labels will indicate the amount of total dissolved solids.

The second factor is tea quantity: adding more tea leaves will make the flavor of your tea more intense. The tea / water ratio should be maintained regardless of the size of the teapot. 1 teaspoon per cup* is recommended.

*Cup: this is the traditional tea cup size. 5 to 6 FL OZ.  Large cups or mugs could contain up to 20 FL Oz of water.

Will the Pyramid bags affect the flavor of my tea?

Pantenger extra large Pyramid bags allow the tea leaves to expand and release all of their flavor into the tea cup. Made of sugar cane fibers that are almost invisible during infusion, they enable you to see the tea leaves absorbing the hot water. More importantly, they do so without contaminating the tea with unwanted flavours as is the case with conventional nylon pyramid bags or traditional paper tea bags. The fiber is eco-friendly and biodegradable and no chemicals are used during the manufacturing process. Pantenger Pyramids are made in the USA and are non-GMO as well as allergy and gluten free.
